Traditional German craftsmanship
The production process of our raisin brandy is divided into several steps. Each of these steps is carried out with the utmost care. The preparation of the mash and the distillation in particular require a great deal of expertise and sensitivity. Our master distillers are experienced specialists and ensure that our products are of the best quality in terms of both appearance and taste. Producing a high-quality distillate from the raisin and bringing out the fine aromas is an art that our North German distillery has mastered to perfection.
Raisins become raisin brandy
Delivery
The raisins are thoroughly checked on delivery. The raisins are delivered in coated wooden crates. The packaging is sensitive to impact and the goods are therefore handled with extreme care. The cargo is always protected from moisture and humidity.
Malt
After thorough washing, the mash is prepared. The fermentation process should start as quickly as possible in order to ferment the mash evenly. The fermentation containers are sealed airtight to prevent oxygen exchange. After daily checks and reaching the required sugar content of the mash, the optimum time for distillation is decided.
Destillation
After fermentation, the mash is filled into a distillation kettle, where it is gently and slowly heated. First, the inedible first run is drained off. The mash then cools down to around 80 degrees and the high-quality part of the spirit (the so-called middle run) flows out. When the temperature of the remaining mash rises to 90 degrees, the so-called after-run is drained off. The first run and the second run are then disposed of. We only use the middle run (the fillet part of the spirit) for our products.
Control
Immediately after distillation, the brandy is thoroughly tested by us for taste, smell, aroma and alcohol content. The alcohol content is tested in a certified laboratory.
Resting phase
Before bottling, we give the distillate the necessary resting phase.This takes away the alcohol's original sharpness. During this process, the alcohol comes into contact with the oxygen. While the alcohol loses its sharpness, the aromatic substances strengthen and harmonize at the same time. This leads to a pleasant and fine drinking experience.
Bottling
Our products are filled into bottles by hand.Our bottles are fitted with a plastic cap, as conventional wooden corks can easily lead to discoloration of the spirit. In contrast to mass production, we only produce relatively small quantities per year.
